  • 2 eggs
  • 150g (5 oz) caster sugar
  • 1 teaspoon anise seed
  • 100g (4 oz) plain flour

MethodPrep:10min ›Ready in:10min

  1. Preheat oven to 190 C / Gas mark 5. Grease and flour a 23x12cm (9x5 in) loaf tin.
  2. Beat the eggs and sugar thoroughly. Add the anise seed, then mix in the flour. Scrape dough into the prepared loaf tin (it will only be about 1/2 full).
  3. Bake for about 20 minutes or until a cocktail stick inserted in the centre comes out clean. Remove from pan and slice into 16 slices. Place slices on a baking sheet and bake for 5 minutes until bottom is browned. Turn and bake for another 5 minutes until the other side is browned.

Used different ingredients.Texture is real nice. A good dunking toast. A little less flavourful than I would prefer, but I am a huge fan of Anise. I also made this recipe using Almonds and Almond flavouring and they were terrific also.-21 Jul 2008

Anisette Toast

Anise flavored Italian biscotti-like cookie that is lighter and softer in texture.

Ingredients

  • 2-½ cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • ¼ teaspoons Kosher Style Salt
  • ¼ cups Soft Unsalted Butter
  • 1 cup White Sugar
  • 3 whole Eggs
  • 4 teaspoons Anise Extract

Preparation

Preheat oven to 350 degrees. Grease 2 baking sheets.

Sift together flour, baking powder, baking soda and salt in a bowl and set aside.

In a large bowl beat butter and sugar until light and fluffy. Beat in 1 egg at a time and then the anise extract. On very low speed, mix in the flour mixture until just incorporated.

Divide dough in half. (At this point the dough will be very soft. Do not add more flour.) Form each dough half into a log directly on the cookie sheet using a rubber spatula. Push into an approximately 10″ long x 5″ wide x 1/2″ thick log and smooth out as best you can for uniformity.

Bake for about 20-25 minutes until golden and firm to touch. Remove from the oven and allow to cool 5 minutes. Cut log into 3/4″ thick slices using a serrated knife.

Place back on the cookie sheet cut side down and bake another 5 – 10 minutes until bottom is golden. Remove again from the oven, flip them to the other side and again bake another 5 – 10 minutes.

Cool on a wire rack before serving and storing.

4 years later and I still love this recipe…just made them again this morning…just a hint! Make sure you beat your eggs really well, you want them foamy…it makes for a lighter cookie!!

These were very simple to make and delicious. I only had anise oil, so I used 1 tsp (as it’s pretty strong) and it was definite enough. So happy to have found this recipe. Thank you.

OK so I have made these 3 times now and every time they come out perfect!! What a great recipe!! Just love it…I am going to try and make some chocolate ones this morning using this base recipe!! Wonderful recipe thank you for sharing it!

I cannot tell you how much I LOVE this recipe!! I have made chocolate and gingerbread biscotti with this “base” recipe and every one comes out great…For the chocolate all you have to do is don’t add the anise extract and add 1/4 cup plus 2 tablespoons of a good quality cocoa, DECREASE the flour by 1/4 cup… and then follow the recipe as usual…the gingerbread was a little more to it…instead of the white sugar did half white and half brown sugar, added 3 TLB of molasses…1½ teaspoon ground cinnamon 1½ teaspoon ground ginger, ¾ teaspoon ground allspice, ½ teaspoon ground cloves, ¼ teaspoon black pepper and a pinch of cardamon…they are so yummy!! The hardest part about this recipe is the shaping, but DON’T add more flour, the dough is supposed to be sticky! Wow so glad I found this recipe!


Homemade Italian Fennel Pork Sausage

Fennel seed is one of the main ingredients in Italian sausage and this recipe includes Asiago cheese for added flavor. Try making your own at home. You can use a food processor to chop up the pork and most electric mixers come with a sausage stuffer attachment. This sausage is just as good in patties as in casings.

  • 2 large boneless pork shoulder roasts, cut into small chunks (remove large pieces of fat) weighing 6 pounds after trimming
  • 1-1/2 tablespoons salt
  • 2 teaspoons black pepper
  • 1/2 teaspoon crushed red pepper
  • 5 tablespoons minced Italian parsley
  • 1/2 cup grated Asiago cheese
  • 4 tablespoons crushed fennel seeds
  • 3 garlic cloves, minced

Toast fennel seeds in a pan in a preheated 325-degree F. oven for 10 minutes. Cool before using in the recipe.

In a large bowl, combine pork, salt, pepper red pepper, parsley, Asiago cheese, fennel seeds and garlic. Thoroughly blend with your hands. Cover the bowl with plastic wrap and refrigerate overnight for flavors to blend.

Put seasoned pork chunks through the medium plate of a food chopper. Place in a large bowl and mix thoroughly to evenly distribute seasonings.

All sausages can be prepared as patties (the easiest) or run through a sausage-stuffer into hog casings by following the instructions of the appliance. Sausages freeze well.

Patties can be sauteed in a little olive oil and served with tomato sauce.

A recent conversation with a colleague of mine reminded me that I have a wonderful biscotti recipe with no nuts. That’s right, no nuts! The perfect recipe for anyone with nut allergies. This type of biscotti recipe can sometimes be referred to as “anise toast”. If the name sounds familiar, you might be thinking of the commercial brand made by Stella D’oro. The next logical question you might have would probably be if a homemade version is any good, right?

Well, these Italian Anise biscotti are not too sweet, easy to make, slightly crunchy and crumbly. If you add more anise than recommended, the biscotti will even get a sort of liquorice-type taste to it. It truly is one of my all-time favourites and I can’t believe I didn’t think of sharing it with you before today. Are they good? Yeah, they’re amazing!

There are several ways to incorporate the liquorice flavour in your biscotti. You can use Sambuca or Anisette liqueur you can use the anise seed or extract or you can use anise oil. I usually use the Anisette liqueur. I always have a bottle or two reserved…for baking , of course.

When I make this biscotti recipe, I will usually divide the batter among three loaf pans. You can place this really soft batter directly on your parchment lined baking sheet, but be warned, they will expand to three times their size. Anise Cake (Torta di Fioretto)

  • 3 3/4 teaspoons active dry yeast
  • 1/4 cup warm water
  • 5 1/4 cups all purpose flour, divided
  • 1/2 cup sugar, plus extra
  • 6 egg yolks
  • 3/4 cup butter, softened at room temperature
  • 1 teaspoon kosher salt
  • 1 1/2 tablespoons anise seeds (fioretto)
  • 2 tablespoons butter, melted

Dissolve the yeast in warm water and add 1 2/3 cups of the flour and knead until a soft dough is obtained. Set aside to rest for 2 hours.

Combine the remaining flour with the 1/2 cup sugar, egg yolks, 3/4 cups butter and salt. Work until a soft and homogenous dough mixture is obtained. Add the dough made earlier and continue to work it in until the dough is smooth and soft.

Butter and dust a medium-sized round baking pan with flour. Roll out the dough to the size of the pan and place the dough in the baking pan. Cover with a cotton kitchen towel and let the dough rise for 45 minutes.

Preheat the oven to 425 degrees F. Sprinkle with additional sugar to taste, the anise seeds and pour the melted butter on top. Transfer to the oven to bake for 20 minutes. Let it cool before serving. Serves 4

This addictive and delicious Italian crackers are the best snack for a glass of wine.

  • 7 g salt
  • 75 ml white wine
  • 60 g extra virgin olive oil
